Greek Salad with chicken
What you need
12 ounces chicken tenders, cut crosswise into 1 inch pieces
¾ cup Niki’s Kitchen Greek Vinaigrette
freshly ground coarse salt and fresh ground pepper
1 tbs olive oil
½ cup cubed feta cheese
¼ cup pitted olives
2 tomatoes, sliced
2 cucumbers, sliced
2 cups romaine lettuce
What to do
Marinate the chicken in 6 tablespoons Niki’s Kitchen Greek Vinaigrette for at least 2 hours or best to do overnight.
Heat 1 tablespoon olive oil in a large nonstick skillet over medium. Add the marinated chicken and cook, tossing, until browned and cooked through, about 8 minutes. Let cool.
Assemble the salad by combining the romaine lettuce, cucumbers, tomatoes, olives, and feta cheese. Top with chicken. Drizzle with remainder of dressing.
Serve and enjoy!
